Almond & Orange Polenta Cake

Ingredients

  • 200g ground almonds
  • 100g fine polenta
  • 150g honey or coconut sugar
  • 3 eggs
  • 150g butter or coconut oil, softened
  • Zest of 2 oranges, juice of 1
  • 1 tsp baking powder
  • Pinch of salt

Method

  1. Preheat oven to 170°C. Grease a 22cm round tin.
  2. Beat butter and honey until fluffy; beat in eggs one at a time.
  3. Fold in almonds, polenta, baking powder, salt, orange zest and juice.
  4. Pour into tin; bake 40–45 min until golden and a skewer comes clean.
  5. Cool before serving; dust with icing sugar if desired.
