Ingredients
- 200g ground almonds
- 100g fine polenta
- 150g honey or coconut sugar
- 3 eggs
- 150g butter or coconut oil, softened
- Zest of 2 oranges, juice of 1
- 1 tsp baking powder
- Pinch of salt
Method
- Preheat oven to 170°C. Grease a 22cm round tin.
- Beat butter and honey until fluffy; beat in eggs one at a time.
- Fold in almonds, polenta, baking powder, salt, orange zest and juice.
- Pour into tin; bake 40–45 min until golden and a skewer comes clean.
- Cool before serving; dust with icing sugar if desired.
