Ingredients
- 200g almond flour
- 2 eggs
- 3 tbsp maple syrup
- 3 tbsp coconut oil, melted
- 1 large apple, grated
- 1 tsp cinnamon
- 1 tsp baking powder
- Pinch of salt
Method
- Preheat oven to 175°C. Line a 10-cup muffin tin.
- Mix all ingredients until combined.
- Divide between cases; bake 20–22 min until golden and a skewer comes out clean.
- Cool before eating; store up to 4 days.
