Apple & Almond Flour Muffins

Ingredients

  • 200g almond flour
  • 2 eggs
  • 3 tbsp maple syrup
  • 3 tbsp coconut oil, melted
  • 1 large apple, grated
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt

Method

  1. Preheat oven to 175°C. Line a 10-cup muffin tin.
  2. Mix all ingredients until combined.
  3. Divide between cases; bake 20–22 min until golden and a skewer comes out clean.
  4. Cool before eating; store up to 4 days.
