Apple Cinnamon Baked Oatmeal

A baked oat dish with grated apple, cinnamon and maple syrup — prep the night before.

Apple Cinnamon Baked Oatmeal

Ingredients

  • 200g rolled oats
  • 2 apples, one grated, one sliced
  • 2 eggs
  • 300ml oat milk
  • 2 tbsp maple syrup
  • 1½ tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt
  • 50g walnuts, chopped

Method

  1. Preheat oven to 180°C.
  2. Mix oats, grated apple, walnuts, cinnamon, salt and baking powder in a baking dish.
  3. Whisk eggs, milk and maple syrup; pour over oats and stir.
  4. Arrange sliced apple on top; bake 35–40 min until set and golden.
  5. Slice and serve warm — or refrigerate and reheat throughout the week.
