Ingredients
- 200g rolled oats
- 2 apples, one grated, one sliced
- 2 eggs
- 300ml oat milk
- 2 tbsp maple syrup
- 1½ tsp cinnamon
- 1 tsp baking powder
- Pinch of salt
- 50g walnuts, chopped
Method
- Preheat oven to 180°C.
- Mix oats, grated apple, walnuts, cinnamon, salt and baking powder in a baking dish.
- Whisk eggs, milk and maple syrup; pour over oats and stir.
- Arrange sliced apple on top; bake 35–40 min until set and golden.
- Slice and serve warm — or refrigerate and reheat throughout the week.
