Ingredients
- 2 avocados, diced
- 400g tin black beans, drained
- 200g sweetcorn
- 1 jalapeño, finely diced
- ½ red onion, diced
- Fresh coriander
- Dressing: juice of 2 limes, 2 tbsp olive oil, 1 tsp cumin, salt, pepper
Method
- Whisk dressing.
- Combine all salad ingredients; toss with dressing.
- Taste and adjust lime or seasoning. Serve immediately.
