Ingredients
- 2 slices wholegrain bread
- 1 ripe avocado
- 2 eggs
- Pinch of chilli flakes
- Salt and black pepper
- Squeeze of lemon juice
Method
- Toast the bread to your liking.
- Halve the avocado, remove the stone and scoop the flesh into a bowl.
- Mash with lemon juice, salt and pepper.
- Poach or fry the eggs to your preference.
- Spread the avocado on the toast, top with an egg and finish with chilli flakes.
