Avocado & Egg Toast

Avocado & Egg Toast

Ingredients

  • 2 slices wholegrain bread
  • 1 ripe avocado
  • 2 eggs
  • Pinch of chilli flakes
  • Salt and black pepper
  • Squeeze of lemon juice

Method

  1. Toast the bread to your liking.
  2. Halve the avocado, remove the stone and scoop the flesh into a bowl.
  3. Mash with lemon juice, salt and pepper.
  4. Poach or fry the eggs to your preference.
  5. Spread the avocado on the toast, top with an egg and finish with chilli flakes.
