Ingredients
- 2 slices wholegrain or sourdough bread
- 1 ripe avocado
- 2 large eggs
- 1 tbsp white wine vinegar
- Pinch of chilli flakes
- Squeeze of lemon juice
- Salt and black pepper
- Fresh coriander or chives, to garnish
Method
- Toast the bread until golden.
- Halve the avocado, remove the stone and scoop the flesh into a bowl. Mash with lemon juice, salt and pepper.
- Bring a saucepan of water to a gentle simmer and add the vinegar. Create a gentle whirlpool with a spoon.
- Crack each egg into a small cup, then slide into the water. Poach for 3 minutes for a runny yolk.
- Spread mashed avocado on the toast, top with a poached egg, chilli flakes and fresh herbs.
Tips
Add a sprinkle of hemp seeds or a drizzle of extra-virgin olive oil for extra nutrition.
