Baked Cinnamon Apples with Oat Crumble

Ingredients

  • 4 medium apples (Braeburn or Bramley)
  • 4 tbsp rolled oats
  • 2 tbsp almond butter
  • 1 tbsp honey or maple syrup
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 2 tbsp raisins or sultanas
  • 2 tbsp chopped walnuts
  • Greek yogurt or coconut yogurt, to serve

Method

  1. Preheat oven to 180°C. Core the apples, leaving the base intact to hold the filling.
  2. Mix oats, almond butter, honey, cinnamon, nutmeg, raisins and walnuts together.
  3. Pack the filling into each apple and place in a baking dish.
  4. Add 2 tbsp water to the dish. Bake for 25–30 minutes until apples are tender.
  5. Serve warm with a dollop of Greek or coconut yogurt.

Tips

Naturally sweet and fibre-rich. The oats and walnuts provide slow-releasing energy and healthy fats.
