Ingredients
- 3 medium courgettes, grated
- 1 tsp salt
- 2 eggs
- 60g feta, crumbled
- 2 tbsp plain or spelt flour
- 2 spring onions, sliced
- Fresh dill
- Yogurt dip to serve
Method
- Salt grated courgette; leave 10 min then squeeze dry thoroughly.
- Mix with eggs, feta, flour, spring onion and dill.
- Drop spoonfuls on an oiled baking tray; flatten slightly.
- Bake at 200°C for 20–25 min until golden, flipping halfway.
