Baked Lemon Herb Salmon

Ingredients

  • 4 salmon fillets
  • Zest & juice of 1 lemon
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill
  • 2 tbsp olive oil
  • Salt, pepper
  • Steamed greens and new potatoes to serve

Method

  1. Preheat oven to 200°C.
  2. Mix lemon zest and juice, garlic, herbs and oil; season.
  3. Place salmon on a lined tray; spoon herb mixture over each fillet.
  4. Bake 15–18 min until salmon flakes easily. Serve with greens and potatoes.
