Ingredients
- 4 salmon fillets
- Zest & juice of 1 lemon
- 3 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill
- 2 tbsp olive oil
- Salt, pepper
- Steamed greens and new potatoes to serve
Method
- Preheat oven to 200°C.
- Mix lemon zest and juice, garlic, herbs and oil; season.
- Place salmon on a lined tray; spoon herb mixture over each fillet.
- Bake 15–18 min until salmon flakes easily. Serve with greens and potatoes.
