Ingredients
- 1 pineapple, skin removed, cored and sliced into rings
- 2 tbsp coconut sugar or honey
- 1 tsp ground ginger
- Juice of 1 lime
- 4 tbsp coconut cream
- Toasted coconut flakes and mint to garnish
Method
- Preheat oven to 200°C or heat a griddle pan.
- Mix coconut sugar with ginger; sprinkle over pineapple rings.
- Roast or griddle 8–10 min per side until caramelised.
- Squeeze lime over; serve with coconut cream and toasted coconut flakes.
