Baked Pineapple with Coconut & Lime

Ingredients

  • 1 pineapple, skin removed, cored and sliced into rings
  • 2 tbsp coconut sugar or honey
  • 1 tsp ground ginger
  • Juice of 1 lime
  • 4 tbsp coconut cream
  • Toasted coconut flakes and mint to garnish

Method

  1. Preheat oven to 200°C or heat a griddle pan.
  2. Mix coconut sugar with ginger; sprinkle over pineapple rings.
  3. Roast or griddle 8–10 min per side until caramelised.
  4. Squeeze lime over; serve with coconut cream and toasted coconut flakes.
