Ingredients
- 2 salmon fillets
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil
- 2 garlic cloves, minced
- Zest and juice of 1 lemon
- 1 tbsp capers
- Fresh dill
- Salt and pepper
Method
- Preheat oven to 200°C. Lay asparagus on a baking tray, drizzle with olive oil and season.
- Place salmon on top. Mix garlic, lemon zest, juice and capers, spoon over the salmon.
- Bake for 15–18 minutes until salmon is cooked through.
- Scatter fresh dill over and serve immediately.
