Banana Nice Cream

Three ingredients, no ice cream maker, one bowl of bliss. Naturally sweet, dairy-free and endlessly customisable.

Banana Nice Cream

Ingredients

  • 4 ripe bananas, peeled, sliced and frozen overnight
  • 2 tbsp peanut butter or almond butter
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Optional toppings: cacao nibs, toasted coconut, fresh berries

Method

  1. Remove frozen banana slices from the freezer and let them sit for 2 minutes.
  2. Add to a food processor with peanut butter, vanilla and salt.
  3. Blend, stopping to scrape down the sides. It will look crumbly at first — keep going until smooth and creamy (3–4 minutes).
  4. Serve immediately as soft-serve, or freeze for 1 hour for a firmer scoop.
  5. Top with your chosen toppings.

Tips

Stir in 2 tbsp cacao powder for chocolate nice cream, or add frozen mango for a tropical twist.
