Ingredients
- 4 ripe bananas, peeled, sliced and frozen overnight
- 2 tbsp peanut butter or almond butter
- 1 tsp vanilla extract
- Pinch of sea salt
- Optional toppings: cacao nibs, toasted coconut, fresh berries
Method
- Remove frozen banana slices from the freezer and let them sit for 2 minutes.
- Add to a food processor with peanut butter, vanilla and salt.
- Blend, stopping to scrape down the sides. It will look crumbly at first — keep going until smooth and creamy (3–4 minutes).
- Serve immediately as soft-serve, or freeze for 1 hour for a firmer scoop.
- Top with your chosen toppings.
Tips
Stir in 2 tbsp cacao powder for chocolate nice cream, or add frozen mango for a tropical twist.
