Oat-based cookies with a naturally sweetened chia berry jam centre — vegan and gluten-free.

Berry & Chia Jam Thumbprint Cookies

Ingredients

  • 200g rolled oats
  • 3 tbsp almond butter
  • 3 tbsp maple syrup
  • 1 tsp vanilla
  • Pinch of salt
  • Chia jam: 150g mixed berries, 2 tbsp chia seeds, 1 tbsp maple syrup — simmered 5 min then cooled

Method

  1. Preheat oven to 180°C. Blend oats to a rough flour.
  2. Mix with almond butter, maple syrup, vanilla and salt into a dough.
  3. Roll into 14 balls; press a well in each.
  4. Bake 12 min; re-press wells while warm.
  5. Fill with cooled chia jam. Cool completely before storing.
