Berry Chia Pudding Dessert

A naturally sweet, antioxidant-rich pudding that doubles as breakfast or dessert.

Berry Chia Pudding Dessert

Ingredients

  • 4 tbsp chia seeds
  • 250ml coconut milk
  • 1 tbsp maple syrup
  • 150g mixed frozen berries
  • 1 tbsp lemon juice
  • Fresh mint to garnish

Method

  1. Make the compote: simmer frozen berries with lemon juice for 5 minutes until jammy. Cool.
  2. Mix chia seeds with coconut milk and maple syrup. Refrigerate 4 hours.
  3. Spoon chia pudding into glasses.
  4. Top with berry compote and fresh mint.
  5. Serve chilled.
