Ingredients
- 4 tbsp chia seeds
- 250ml coconut milk
- 1 tbsp maple syrup
- 150g mixed frozen berries
- 1 tbsp lemon juice
- Fresh mint to garnish
Method
- Make the compote: simmer frozen berries with lemon juice for 5 minutes until jammy. Cool.
- Mix chia seeds with coconut milk and maple syrup. Refrigerate 4 hours.
- Spoon chia pudding into glasses.
- Top with berry compote and fresh mint.
- Serve chilled.
