Ingredients
- 2 medium sweet potatoes, diced
- 400g tin black beans, drained
- 1 tsp cumin, 1 tsp smoked paprika, ½ tsp cayenne
- 8 small corn tortillas
- Mango salsa: 1 mango diced, ½ red onion, coriander, lime juice, chilli
- Olive oil, salt
Method
- Toss sweet potato with oil, cumin, paprika and cayenne; roast at 200°C for 25 min.
- Warm beans in a pan with a pinch of cumin and salt.
- Combine mango salsa ingredients.
- Warm tortillas; fill with sweet potato, beans and salsa.
