Ingredients
- 4 eggs, scrambled
- 400g tin black beans, drained and rinsed
- 1 avocado, diced
- 4 tbsp fresh tomato salsa
- 1 tsp cumin
- 150g cooked brown rice
- Juice of ½ lime
- Fresh coriander to serve
Method
- Warm black beans with cumin in a small pan; season.
- Scramble eggs to your liking.
- Build bowls: rice, beans, eggs, avocado and salsa.
- Finish with lime juice and coriander.
