Ingredients

  • 4 eggs, scrambled
  • 400g tin black beans, drained and rinsed
  • 1 avocado, diced
  • 4 tbsp fresh tomato salsa
  • 1 tsp cumin
  • 150g cooked brown rice
  • Juice of ½ lime
  • Fresh coriander to serve

Method

  1. Warm black beans with cumin in a small pan; season.
  2. Scramble eggs to your liking.
  3. Build bowls: rice, beans, eggs, avocado and salsa.
  4. Finish with lime juice and coriander.
