Ingredients
- 1 large head broccoli, roughly chopped (include stalk)
- 1 onion, diced
- 3 garlic cloves
- 1 litre vegetable stock
- 150ml single cream
- 100g Stilton, crumbled
- 2 tbsp olive oil
- Nutmeg, salt, pepper
Method
- Soften onion and garlic in oil 5 min.
- Add broccoli and stock; simmer 12 min until tender.
- Blend until smooth; stir in cream.
- Warm gently; season with nutmeg, salt and pepper.
- Ladle into bowls; crumble Stilton over each.
