Broccoli & Stilton Soup

Classic British pub-style soup — silky broccoli with a generous crumble of Stilton.

Broccoli & Stilton Soup

Ingredients

  • 1 large head broccoli, roughly chopped (include stalk)
  • 1 onion, diced
  • 3 garlic cloves
  • 1 litre vegetable stock
  • 150ml single cream
  • 100g Stilton, crumbled
  • 2 tbsp olive oil
  • Nutmeg, salt, pepper

Method

  1. Soften onion and garlic in oil 5 min.
  2. Add broccoli and stock; simmer 12 min until tender.
  3. Blend until smooth; stir in cream.
  4. Warm gently; season with nutmeg, salt and pepper.
  5. Ladle into bowls; crumble Stilton over each.
