Fluffy gluten-free buckwheat pancakes bursting with fresh blueberries.

Buckwheat Blueberry Pancakes

Ingredients

  • 150g buckwheat flour
  • 1 tsp baking powder
  • 1 egg
  • 200ml oat milk
  • 1 tbsp maple syrup
  • 150g fresh blueberries
  • Coconut oil for cooking

Method

  1. Whisk flour and baking powder; add egg, milk and maple syrup, mix until smooth.
  2. Fold in blueberries.
  3. Cook tablespoons of batter in a lightly oiled pan over medium heat, 2 min per side.
  4. Serve stacked with extra blueberries and a drizzle of maple syrup.
