Ingredients
- 150g buckwheat flour
- 1 tsp baking powder
- 1 egg
- 200ml oat milk
- 1 tbsp maple syrup
- 150g fresh blueberries
- Coconut oil for cooking
Method
- Whisk flour and baking powder; add egg, milk and maple syrup, mix until smooth.
- Fold in blueberries.
- Cook tablespoons of batter in a lightly oiled pan over medium heat, 2 min per side.
- Serve stacked with extra blueberries and a drizzle of maple syrup.
