Chicken & Avocado Sandwich

A clean, classic sandwich with healthy fats and lean protein.

Chicken & Avocado Sandwich

Ingredients

  • 2 slices sourdough bread
  • 120g cooked chicken breast, sliced
  • ½ avocado, mashed
  • 1 tsp Dijon mustard
  • Handful of watercress
  • 2 slices tomato
  • Salt and pepper

Method

  1. Toast the sourdough slices lightly.
  2. Spread one slice with mashed avocado, season with salt and pepper.
  3. Spread the other slice with Dijon mustard.
  4. Layer chicken, tomato and watercress.
  5. Press together, slice diagonally and serve.
