Ingredients
- 2 chicken breasts, thinly sliced
- 1 large head broccoli, broken into florets
- 1 red pepper, sliced
- 3 spring onions, sliced
- 3 garlic cloves, minced
- 2cm piece fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp honey or maple syrup
- 1 tsp cornflour
- 1 tbsp vegetable oil
- 1 tsp sesame seeds, to serve
Method
- Mix soy sauce, sesame oil, honey, cornflour and 2 tbsp water to make the sauce. Set aside.
- Heat vegetable oil in a wok or large frying pan over high heat. Cook chicken for 5–6 minutes until golden. Remove.
- Add broccoli and pepper to the pan. Stir-fry for 4 minutes. Add garlic and ginger, cook 1 minute.
- Return chicken to the pan. Pour over the sauce and toss everything together for 2 minutes until glossy.
- Scatter with spring onions and sesame seeds. Serve immediately.
Tips
Swap chicken for tofu or king prawns to vary the protein. Add a pinch of chilli flakes for heat.
