Chicken & Broccoli Stir-Fry

A quick, high-protein stir-fry ready in 20 minutes. Serve with brown rice or cauliflower rice for a clean meal.

Chicken & Broccoli Stir-Fry

Ingredients

  • 2 chicken breasts, thinly sliced
  • 1 large head broccoli, broken into florets
  • 1 red pepper, sliced
  • 3 spring onions, sliced
  • 3 garlic cloves, minced
  • 2cm piece fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp cornflour
  • 1 tbsp vegetable oil
  • 1 tsp sesame seeds, to serve

Method

  1. Mix soy sauce, sesame oil, honey, cornflour and 2 tbsp water to make the sauce. Set aside.
  2. Heat vegetable oil in a wok or large frying pan over high heat. Cook chicken for 5–6 minutes until golden. Remove.
  3. Add broccoli and pepper to the pan. Stir-fry for 4 minutes. Add garlic and ginger, cook 1 minute.
  4. Return chicken to the pan. Pour over the sauce and toss everything together for 2 minutes until glossy.
  5. Scatter with spring onions and sesame seeds. Serve immediately.

Tips

Swap chicken for tofu or king prawns to vary the protein. Add a pinch of chilli flakes for heat.
