Ingredients
- 1 large wholemeal tortilla
- 1 grilled chicken breast, sliced
- ½ ripe avocado, mashed
- ½ mango, peeled and diced
- Handful of mixed salad leaves
- ¼ red onion, thinly sliced
- Squeeze of lime juice
- Pinch of chilli flakes
- Salt and pepper
Method
- Season mashed avocado with lime juice, salt, pepper and chilli flakes.
- Lay the tortilla flat. Spread the avocado over the centre.
- Layer on the salad leaves, sliced chicken, mango and red onion.
- Roll tightly, tucking in the sides as you go. Slice in half and serve.
Tips
Swap mango for peach or nectarine in season. Add a drizzle of sriracha or hot sauce if you like heat.
