Chicken Souvlaki with Tzatziki

Greek marinated chicken skewers with charred vegetables and cooling tzatziki.

Chicken Souvlaki with Tzatziki

Ingredients

  • 600g chicken breast, cubed
  • Marinade: 3 tbsp olive oil, juice of 1 lemon, 3 garlic cloves minced, 1 tsp oregano, 1 tsp cumin, salt, pepper
  • 1 red pepper, 1 red onion — cut into chunks
  • Tzatziki: 200g Greek yogurt, ½ cucumber grated and squeezed, 1 garlic clove, 1 tbsp fresh dill, lemon juice
  • Warm pittas to serve

Method

  1. Marinate chicken at least 30 min (overnight ideal).
  2. Thread chicken and veg alternately on skewers.
  3. Grill or griddle 12–15 min, turning, until cooked through.
  4. Mix tzatziki ingredients. Serve skewers with pittas and tzatziki.
