Chicken Tikka Masala

The nation's favourite — made lighter with a tomato-rich sauce and served with cauliflower rice.

Chicken Tikka Masala

Ingredients

  • 400g chicken breast, cubed
  • 200ml natural yogurt
  • 2 tbsp tikka masala paste
  • 400g tin chopped tomatoes
  • 150ml single cream
  • 1 onion, diced
  • 2 garlic cloves
  • 1 tbsp garam masala
  • Fresh coriander
  • Cauliflower rice to serve

Method

  1. Marinate chicken in yogurt and tikka paste for at least 30 minutes.
  2. Grill or pan-fry chicken until charred at the edges.
  3. Soften onion, add garlic and garam masala, cook 2 minutes.
  4. Add tomatoes and simmer 10 minutes, stir in cream.
  5. Add chicken, simmer 5 more minutes. Serve with coriander and cauliflower rice.
