A quick, colourful stir fry that hits the table in under 20 minutes.

Chicken & Vegetable Stir Fry

Ingredients

  • 300g chicken breast, thinly sliced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 2 pak choi, quartered
  • 3 spring onions
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornflour
  • 2 garlic cloves
  • 1 tsp grated ginger

Method

  1. Mix soy sauce, oyster sauce, sesame oil and cornflour in a small bowl.
  2. Stir-fry chicken in a hot wok until golden, set aside.
  3. Fry garlic and ginger 30 seconds, then add peppers and pak choi.
  4. Return chicken and pour over the sauce.
  5. Toss everything together over high heat for 2 minutes. Serve with rice.
