Ingredients
- 200g desiccated coconut
- 3 egg whites
- 80g caster sugar
- 1 tsp vanilla extract
- 100g dark chocolate to dip (optional)
Method
- Preheat oven to 170°C. Line a baking tray with parchment.
- Whisk egg whites to soft peaks, gradually whisk in sugar until glossy.
- Fold in coconut and vanilla.
- Spoon into mounds on the tray and bake 15–18 minutes until golden.
- Cool completely, then dip bases in melted dark chocolate if using.
