Coconut Macaroons

Crispy outside, chewy inside and naturally gluten-free — a crowd-pleasing treat.

Coconut Macaroons

Ingredients

  • 200g desiccated coconut
  • 3 egg whites
  • 80g caster sugar
  • 1 tsp vanilla extract
  • 100g dark chocolate to dip (optional)

Method

  1. Preheat oven to 170°C. Line a baking tray with parchment.
  2. Whisk egg whites to soft peaks, gradually whisk in sugar until glossy.
  3. Fold in coconut and vanilla.
  4. Spoon into mounds on the tray and bake 15–18 minutes until golden.
  5. Cool completely, then dip bases in melted dark chocolate if using.
