Ingredients
- 400ml coconut milk
- 1 tbsp culinary matcha powder
- 2 tbsp honey or maple syrup
- 2½ tsp agar-agar powder (or 2½ tsp gelatin)
- 3 tbsp cold water
- Red bean paste or berries to serve
Method
- Dissolve agar-agar in cold water; set aside.
- Heat coconut milk with honey until just simmering; whisk in matcha.
- Add agar-agar; stir until fully dissolved. Remove from heat.
- Pour into glasses or moulds; refrigerate 3 hours until set.
- Serve with a spoonful of red bean paste or fresh berries.
