Coconut Matcha Panna Cotta

Ingredients

  • 400ml coconut milk
  • 1 tbsp culinary matcha powder
  • 2 tbsp honey or maple syrup
  • 2½ tsp agar-agar powder (or 2½ tsp gelatin)
  • 3 tbsp cold water
  • Red bean paste or berries to serve

Method

  1. Dissolve agar-agar in cold water; set aside.
  2. Heat coconut milk with honey until just simmering; whisk in matcha.
  3. Add agar-agar; stir until fully dissolved. Remove from heat.
  4. Pour into glasses or moulds; refrigerate 3 hours until set.
  5. Serve with a spoonful of red bean paste or fresh berries.
