Courgette Soup with Basil Oil

Ingredients

  • 6 courgettes, roughly sliced
  • 1 onion, diced
  • 2 garlic cloves
  • 800ml vegetable stock
  • 2 tbsp olive oil
  • Basil oil: large bunch basil, 4 tbsp olive oil, pinch salt — blended
  • Salt, pepper

Method

  1. Soften onion and garlic in oil 5 min.
  2. Add courgette and stock; simmer 15 min until very tender.
  3. Blend until smooth; season generously.
  4. Blend basil with oil and salt for the basil oil.
  5. Serve soup in bowls with a swirl of basil oil.
