Ingredients
- 6 courgettes, roughly sliced
- 1 onion, diced
- 2 garlic cloves
- 800ml vegetable stock
- 2 tbsp olive oil
- Basil oil: large bunch basil, 4 tbsp olive oil, pinch salt — blended
- Salt, pepper
Method
- Soften onion and garlic in oil 5 min.
- Add courgette and stock; simmer 15 min until very tender.
- Blend until smooth; season generously.
- Blend basil with oil and salt for the basil oil.
- Serve soup in bowls with a swirl of basil oil.
