Ingredients
- 200g cooked brown rice
- 150g edamame (shelled)
- 1 avocado, sliced
- ½ cucumber, diced
- 2 sheets nori, torn or cut into strips
- 2 tbsp soy sauce or tamari
- 1 tbsp rice wine vinegar
- 1 tsp sesame oil
- Sesame seeds, pickled ginger to serve
Method
- Season warm rice with vinegar, sesame oil and a pinch of salt.
- Arrange rice, edamame, avocado and cucumber in bowls.
- Add nori strips and pickled ginger.
- Drizzle with soy sauce and scatter sesame seeds.
