A deconstructed sushi bowl with seasoned brown rice, edamame, avocado and nori.

Edamame & Brown Rice Sushi Bowl

Ingredients

  • 200g cooked brown rice
  • 150g edamame (shelled)
  • 1 avocado, sliced
  • ½ cucumber, diced
  • 2 sheets nori, torn or cut into strips
  • 2 tbsp soy sauce or tamari
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • Sesame seeds, pickled ginger to serve

Method

  1. Season warm rice with vinegar, sesame oil and a pinch of salt.
  2. Arrange rice, edamame, avocado and cucumber in bowls.
  3. Add nori strips and pickled ginger.
  4. Drizzle with soy sauce and scatter sesame seeds.
