Complex, warming Ethiopian spice blend with dried chillis, fenugreek and korarima.

Ethiopian Berbere Blend

Ingredients

  • 3 tsp sweet paprika
  • 2 tsp ground coriander
  • 1 tsp ground ginger
  • 1 tsp ground fenugreek
  • 1 tsp ground cardamom
  • ½ tsp cinnamon
  • ½ tsp allspice
  • ½ tsp ground cloves
  • 1 tsp cayenne pepper
  • 1 tsp sea salt

Method

  1. Combine all ingredients; mix well.
  2. Store in an airtight jar up to 3 months.
  3. Use in stews, lentil dishes and spiced meat.

Tips

Classic in Ethiopian doro wat (chicken stew) and misir (spiced lentils). Toast the blend lightly in a dry pan to intensify the flavour before using.
