Gazpacho

Chilled Spanish gazpacho with ripe tomatoes, cucumber, peppers and a drizzle of olive oil.

Gazpacho

Ingredients

  • 800g ripe tomatoes, roughly chopped
  • 1 cucumber, roughly chopped
  • 1 red pepper, roughly chopped
  • 1 small red onion
  • 2 garlic cloves
  • 3 tbsp red wine vinegar
  • 4 tbsp extra virgin olive oil
  • 100ml cold water
  • Salt, pepper
  • Diced cucumber, croutons, olive oil to garnish

Method

  1. Blend all soup ingredients until smooth.
  2. Season generously; add more vinegar to taste.
  3. Refrigerate at least 2 hours until thoroughly cold.
  4. Serve in chilled bowls with garnishes.
