Ingredients
- 800g ripe tomatoes, roughly chopped
- 1 cucumber, roughly chopped
- 1 red pepper, roughly chopped
- 1 small red onion
- 2 garlic cloves
- 3 tbsp red wine vinegar
- 4 tbsp extra virgin olive oil
- 100ml cold water
- Salt, pepper
- Diced cucumber, croutons, olive oil to garnish
Method
- Blend all soup ingredients until smooth.
- Season generously; add more vinegar to taste.
- Refrigerate at least 2 hours until thoroughly cold.
- Serve in chilled bowls with garnishes.
