Greek Salad

Ingredients

  • 200g cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, sliced
  • 100g Kalamata olives
  • 150g feta cheese, cubed
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper

Method

  1. Combine tomatoes, cucumber, red onion and olives in a large bowl.
  2. Scatter feta over the top.
  3. Whisk olive oil, vinegar and oregano together for the dressing.
  4. Pour dressing over the salad.
  5. Season with salt and pepper. Do not toss — let it sit for 5 minutes before serving.
