Greek Yogurt Cheesecake

A high-protein, no-bake cheesecake that tastes indulgent but isn't.

Greek Yogurt Cheesecake

Ingredients

  • 200g digestive biscuits, crushed
  • 80g butter, melted
  • 500g Greek yogurt
  • 200g cream cheese
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Mixed berry compote to serve

Method

  1. Mix biscuit crumbs with melted butter. Press into the base of a lined tin. Chill 30 minutes.
  2. Beat Greek yogurt, cream cheese, honey, vanilla and lemon zest until smooth.
  3. Pour over the chilled base and smooth the top.
  4. Refrigerate for at least 4 hours or overnight.
  5. Top with berry compote and slice to serve.
