Authentic Thai green papaya salad with peanuts, chilli, fish sauce and lime.

Green Papaya Salad (Som Tum)

Ingredients

  • 1 green papaya (about 400g), peeled and shredded
  • 2 tomatoes, cut into wedges
  • 100g green beans, halved
  • 2 red chillies
  • 2 garlic cloves
  • Dressing: 3 tbsp fish sauce, 2 tbsp lime juice, 1 tbsp palm sugar or honey
  • 60g roasted peanuts
  • Fresh coriander

Method

  1. Pound garlic and chillies roughly in a pestle.
  2. Add dressing ingredients; mix.
  3. Toss papaya, tomatoes and green beans in dressing.
  4. Top with peanuts and coriander.
