A fluffy three-egg omelette loaded with peas, spinach, avocado and hemp seeds.

Green Protein Omelette

Ingredients

  • 3 eggs
  • 50g frozen peas, thawed
  • 40g baby spinach
  • ½ avocado, sliced
  • 1 tbsp hemp seeds
  • 1 tsp olive oil
  • Salt, pepper

Method

  1. Beat eggs with salt and pepper.
  2. Heat oil in a non-stick pan over medium heat; add peas and spinach, cook 1 min.
  3. Pour in eggs; when edges set, fold in half and cook 1 min more.
  4. Slide onto a plate; top with avocado and hemp seeds.
