Ingredients
- 3 eggs
- 50g frozen peas, thawed
- 40g baby spinach
- ½ avocado, sliced
- 1 tbsp hemp seeds
- 1 tsp olive oil
- Salt, pepper
Method
- Beat eggs with salt and pepper.
- Heat oil in a non-stick pan over medium heat; add peas and spinach, cook 1 min.
- Pour in eggs; when edges set, fold in half and cook 1 min more.
- Slide onto a plate; top with avocado and hemp seeds.
