Classic Italian lemon, parsley and garlic condiment — the finishing touch for braised meats and fish.

Gremolata

Ingredients

  • Zest of 2 lemons
  • Large bunch flat-leaf parsley, finely chopped
  • 2 garlic cloves, very finely minced
  • Pinch of sea salt

Method

  1. Combine all ingredients; mix well.
  2. Use immediately for the freshest flavour — the garlic will mellow over time.
  3. Scatter over osso buco, roast lamb, braised lentils or grilled fish just before serving.
