Kale Caesar Salad

Kale stands up to the dressing far better than romaine — sturdy, earthy and delicious.

Kale Caesar Salad

Ingredients

  • 200g curly kale, tough stems removed
  • 50g Parmesan, shaved
  • 50g croutons
  • 4 tbsp Caesar dressing
  • 1 garlic clove, halved
  • 2 anchovy fillets (optional)
  • Cracked black pepper

Method

  1. Massage kale with a pinch of salt for 2 minutes until softened.
  2. Rub the serving bowl with the cut garlic clove.
  3. Toss kale with Caesar dressing until well coated.
  4. Add Parmesan, croutons and anchovies if using.
  5. Finish with plenty of cracked black pepper.
