Crispy-skinned chicken thighs roasted with lemon, garlic and fresh herbs over new potatoes.

Lemon Garlic Roast Chicken Thighs

Ingredients

  • 8 bone-in chicken thighs
  • 500g new potatoes, halved
  • 1 lemon, sliced
  • 6 garlic cloves, unpeeled
  • 4 sprigs rosemary or thyme
  • 3 tbsp olive oil
  • Salt, pepper

Method

  1. Preheat oven to 200°C.
  2. Toss potatoes with half the oil; spread in a large roasting tin.
  3. Rub chicken with remaining oil, salt and pepper; place on potatoes skin-side up.
  4. Add lemon slices, garlic and herbs around the tin.
  5. Roast 45 min until skin is golden and juices run clear.
