Ingredients
- 8 bone-in chicken thighs
- 500g new potatoes, halved
- 1 lemon, sliced
- 6 garlic cloves, unpeeled
- 4 sprigs rosemary or thyme
- 3 tbsp olive oil
- Salt, pepper
Method
- Preheat oven to 200°C.
- Toss potatoes with half the oil; spread in a large roasting tin.
- Rub chicken with remaining oil, salt and pepper; place on potatoes skin-side up.
- Add lemon slices, garlic and herbs around the tin.
- Roast 45 min until skin is golden and juices run clear.
