A classic Sunday roast that's high in protein and full of fresh herb flavour.

Lemon Herb Roast Chicken

Ingredients

  • 1 whole chicken (1.5kg)
  • 2 lemons, halved
  • 4 garlic cloves
  • Fresh rosemary and thyme
  • 2 tbsp olive oil
  • Salt and black pepper
  • 500g new potatoes

Method

  1. Preheat oven to 190°C. Stuff the chicken cavity with lemon halves, garlic and herbs.
  2. Rub the skin with olive oil, salt and pepper.
  3. Arrange new potatoes around the chicken in the roasting tin.
  4. Roast for 1 hour 20 minutes until juices run clear.
  5. Rest for 10 minutes before carving.
