Ingredients
- 1 whole chicken (1.5kg)
- 2 lemons, halved
- 4 garlic cloves
- Fresh rosemary and thyme
- 2 tbsp olive oil
- Salt and black pepper
- 500g new potatoes
Method
- Preheat oven to 190°C. Stuff the chicken cavity with lemon halves, garlic and herbs.
- Rub the skin with olive oil, salt and pepper.
- Arrange new potatoes around the chicken in the roasting tin.
- Roast for 1 hour 20 minutes until juices run clear.
- Rest for 10 minutes before carving.
