Ingredients
- 150g cashews
- 100g rolled oats
- 3 tbsp desiccated coconut
- 2 tbsp maple syrup
- Zest & juice of 2 lemons
- 1 tbsp poppy seeds
- Pinch of salt
Method
- Blend cashews and oats until finely ground.
- Add coconut, maple syrup, lemon zest and juice, poppy seeds and salt; pulse to combine.
- Roll into 14 balls; refrigerate 30 min. Store chilled up to 2 weeks.
