Lemon & Poppy Seed Energy Balls

Ingredients

  • 150g cashews
  • 100g rolled oats
  • 3 tbsp desiccated coconut
  • 2 tbsp maple syrup
  • Zest & juice of 2 lemons
  • 1 tbsp poppy seeds
  • Pinch of salt

Method

  1. Blend cashews and oats until finely ground.
  2. Add coconut, maple syrup, lemon zest and juice, poppy seeds and salt; pulse to combine.
  3. Roll into 14 balls; refrigerate 30 min. Store chilled up to 2 weeks.
