Ingredients
- 400ml coconut milk
- 4 tbsp chia seeds
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 2 ripe mangoes, blended to a purée
- Toasted coconut flakes to serve
Method
- Whisk coconut milk, chia seeds, maple syrup and vanilla; refrigerate overnight until thick and set.
- Layer chia mousse and mango purée alternately in glasses.
- Top with toasted coconut flakes.
