Silky coconut chia mousse layered with fresh mango purée — naturally sweet and dairy-free.

Mango & Coconut Chia Mousse

Ingredients

  • 400ml coconut milk
  • 4 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 ripe mangoes, blended to a purée
  • Toasted coconut flakes to serve

Method

  1. Whisk coconut milk, chia seeds, maple syrup and vanilla; refrigerate overnight until thick and set.
  2. Layer chia mousse and mango purée alternately in glasses.
  3. Top with toasted coconut flakes.
