Wholemeal pittas stuffed with tabbouleh, roasted veg and grilled halloumi.

Mediterranean Stuffed Pittas

Ingredients

  • 4 wholemeal pitta breads
  • 200g halloumi, sliced
  • 1 courgette, sliced
  • 1 red pepper, sliced
  • 4 tbsp ready-made or homemade tabbouleh
  • 4 tbsp hummus
  • Olive oil, dried oregano, salt

Method

  1. Brush veg with oil and oregano; griddle or roast until golden.
  2. Griddle halloumi slices 2 min per side.
  3. Warm pittas; stuff with hummus, tabbouleh, roasted veg and halloumi.
