Ingredients
- 4 wholemeal pitta breads
- 200g halloumi, sliced
- 1 courgette, sliced
- 1 red pepper, sliced
- 4 tbsp ready-made or homemade tabbouleh
- 4 tbsp hummus
- Olive oil, dried oregano, salt
Method
- Brush veg with oil and oregano; griddle or roast until golden.
- Griddle halloumi slices 2 min per side.
- Warm pittas; stuff with hummus, tabbouleh, roasted veg and halloumi.
