Bite-sized cubed aubergine roasted with a miso glaze — umami-packed and surprisingly addictive.

Miso Aubergine Bites

Ingredients

  • 2 aubergines, cut into 2cm cubes
  • 2 tbsp white miso paste
  • 1 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp honey
  • Sesame seeds to garnish

Method

  1. Preheat oven to 200°C.
  2. Mix miso, mirin, soy, sesame oil and honey into a glaze.
  3. Toss aubergine in glaze; spread on a lined tray.
  4. Roast 25 min until golden and caramelised. Scatter sesame seeds; serve warm.
