Ingredients
- 2 aubergines, cut into 2cm cubes
- 2 tbsp white miso paste
- 1 tbsp mirin
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp honey
- Sesame seeds to garnish
Method
- Preheat oven to 200°C.
- Mix miso, mirin, soy, sesame oil and honey into a glaze.
- Toss aubergine in glaze; spread on a lined tray.
- Roast 25 min until golden and caramelised. Scatter sesame seeds; serve warm.
