Ingredients
- 3 medium aubergines, halved lengthways
- 3 tbsp white miso paste
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- Sesame seeds, spring onion, rice to serve
Method
- Score aubergine flesh in a crosshatch; brush with a little oil.
- Roast cut-side up at 200°C for 20 min.
- Mix miso, mirin, soy, honey and sesame oil; spread over aubergine.
- Grill 5 min until glaze caramelises.
- Serve over rice with sesame seeds and spring onion.
