Caramelised miso-glazed aubergine — a Japanese-inspired umami-rich main over rice.

Miso Glazed Aubergine

Ingredients

  • 3 medium aubergines, halved lengthways
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • Sesame seeds, spring onion, rice to serve

Method

  1. Score aubergine flesh in a crosshatch; brush with a little oil.
  2. Roast cut-side up at 200°C for 20 min.
  3. Mix miso, mirin, soy, honey and sesame oil; spread over aubergine.
  4. Grill 5 min until glaze caramelises.
  5. Serve over rice with sesame seeds and spring onion.
