Ingredients
- 4 large carrots, grated
- 2 oranges, peeled and segmented
- 1 tsp ground cumin
- 1 tsp harissa paste
- Juice of 1 lemon
- 2 tbsp olive oil
- Small bunch coriander, chopped
- Salt, pepper
Method
- Combine carrots and orange segments in a bowl.
- Mix harissa, cumin, lemon and olive oil; season.
- Toss with salad; scatter coriander and serve.
