Moroccan Carrot & Orange Salad

Ingredients

  • 4 large carrots, grated
  • 2 oranges, peeled and segmented
  • 1 tsp ground cumin
  • 1 tsp harissa paste
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Small bunch coriander, chopped
  • Salt, pepper

Method

  1. Combine carrots and orange segments in a bowl.
  2. Mix harissa, cumin, lemon and olive oil; season.
  3. Toss with salad; scatter coriander and serve.
