Ingredients
- 200g cooked farro or spelt
- 2 tins good-quality tuna in olive oil
- 150g green beans, blanched
- 4 soft-boiled eggs
- 100g cherry tomatoes
- 60g Niçoise olives
- Dressing: 3 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon, 1 anchovy fillet mashed, salt, pepper
Method
- Whisk dressing.
- Arrange farro, tuna, green beans, eggs, tomatoes and olives in bowls.
- Drizzle generously with dressing.
