Ingredients
- 150g Medjool dates, pitted
- 100g rolled oats
- 2 tbsp cacao powder
- 2 tbsp almond butter
- 1 tbsp honey
- 50g desiccated coconut (+ extra for rolling)
- 50g dark chocolate chips
- Pinch of sea salt
Method
- Blitz dates in a food processor until they form a sticky paste.
- Add oats, cacao, almond butter, honey, coconut and salt. Pulse until combined.
- Stir in chocolate chips by hand.
- Roll mixture into 16–18 balls (about 1 tbsp each).
- Roll in desiccated coconut and refrigerate for 30 minutes to firm up. Store in the fridge for up to 2 weeks.
Tips
Swap cacao for vanilla and omit chocolate chips for a milder version. Add a tsp of maca powder for an extra energy boost.
