Ingredients

  • 150g Medjool dates, pitted
  • 100g rolled oats
  • 2 tbsp cacao powder
  • 2 tbsp almond butter
  • 1 tbsp honey
  • 50g desiccated coconut (+ extra for rolling)
  • 50g dark chocolate chips
  • Pinch of sea salt

Method

  1. Blitz dates in a food processor until they form a sticky paste.
  2. Add oats, cacao, almond butter, honey, coconut and salt. Pulse until combined.
  3. Stir in chocolate chips by hand.
  4. Roll mixture into 16–18 balls (about 1 tbsp each).
  5. Roll in desiccated coconut and refrigerate for 30 minutes to firm up. Store in the fridge for up to 2 weeks.

Tips

Swap cacao for vanilla and omit chocolate chips for a milder version. Add a tsp of maca powder for an extra energy boost.
