Creamy cinnamon almond horchata — a plant-based twist on the classic Mexican drink.

Nut Milk Horchata

Ingredients

  • 200g blanched almonds, soaked overnight
  • 1 litre cold water
  • 2 cinnamon sticks
  • 2 tbsp honey or agave
  • 1 tsp vanilla extract
  • Ice to serve

Method

  1. Drain almonds; blend with water, cinnamon sticks, honey and vanilla until very smooth.
  2. Strain through a nut milk bag or muslin — squeeze well.
  3. Refrigerate; shake before serving over ice.
