Oat & Raisin Cookies

Wholesome, chewy cookies that are lower in sugar than shop-bought and much more satisfying.

Oat & Raisin Cookies

Ingredients

  • 150g rolled oats
  • 80g wholemeal flour
  • 80g coconut sugar
  • 60g butter, melted
  • 1 egg
  • 80g raisins
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • 1 tsp vanilla extract

Method

  1. Preheat oven to 180°C. Line a baking tray.
  2. Mix all dry ingredients together.
  3. Beat in melted butter, egg and vanilla.
  4. Fold in raisins.
  5. Scoop tablespoons onto the tray, press slightly flat. Bake 12–14 minutes until golden.
