Ingredients
- 4 chicken breasts
- 3 courgettes, sliced
- 200g cherry tomatoes
- 4 tbsp basil pesto
- 2 tbsp olive oil
- 30g pine nuts
- Salt, pepper
Method
- Preheat oven to 190°C.
- Lay courgettes in a baking dish; season. Place chicken on top.
- Spread pesto over chicken; scatter tomatoes and pine nuts.
- Drizzle with olive oil; bake 30–35 min until chicken is cooked through.
