Ingredients
- 200g cooked king prawns
- 1 avocado, sliced
- Juice of 1 lime
- 1 tbsp olive oil
- ½ red chilli, finely diced
- Small bunch of coriander
- 100g mixed salad leaves
- Pinch of sea salt
Method
- Arrange salad leaves on plates.
- Lay avocado slices over the leaves.
- Toss prawns with lime juice, olive oil, chilli and salt.
- Spoon prawns over the avocado.
- Scatter fresh coriander and serve immediately.
