Elegant yet simple — a light salad that takes ten minutes from start to finish.

Prawn & Avocado Salad

Ingredients

  • 200g cooked king prawns
  • 1 avocado, sliced
  • Juice of 1 lime
  • 1 tbsp olive oil
  • ½ red chilli, finely diced
  • Small bunch of coriander
  • 100g mixed salad leaves
  • Pinch of sea salt

Method

  1. Arrange salad leaves on plates.
  2. Lay avocado slices over the leaves.
  3. Toss prawns with lime juice, olive oil, chilli and salt.
  4. Spoon prawns over the avocado.
  5. Scatter fresh coriander and serve immediately.
